Coconut, Matcha and Chocolate Energy Balls

Ingredients
  • ½ cup coconut flour (found in the organic section of grocery stores)
  • 6 tbsp of maple syrup
  • 4 tbsp of sweetened grated coconut
  • 1 ½ tbsp of coconut oil
  • 4 tsp Matcha powder
  • ¼ cup pistachio
  • ½ tsp vanilla extract
  • 1 avocado
  • 3 100 g Laura Secord maple crunch milk chocolate bar
Servings
25-35 balls
  1. In a food processor, put all the ingredients except the maple milk chocolate and mix until you obtain a uniform paste.
  2. Using your hands, form balls of approximately ½ tbsp. of the mixture and place them on a baking sheet lined with parchment paper.
  3. Place in the refrigerator for about 30 minutes.
  4. Melt the chocolate in the microwave for about 1 minute 30 seconds, stirring every 15 seconds.
  5. Dip the balls in the chocolate and sprinkle with a little coconut (if desired).
  6. Return the balls to the refrigerator until the chocolate hardens.
  7. When the chocolate is hardened, all that’s left is to enjoy!!!
